There are several ways to prepare vegetables: chopped, sliced, in sticks or diced. Discover the 4 techniques for preparing vegetables for your recipes.

 

Why cut vegetables?

Depending on the vegetable you’re using, how you cut it will make a difference in the way the recipe turns out:

  • Cutting your vegetables will make them easier to prepare and will help them cook evenly. While a small carrot can be cooked whole, it is very hard to cook a whole cabbage!
  • Chopped vegetables, like garlic and onions, release more flavour during cooking.
  • You can fit a larger quantity of vegetables in your pan once they are chopped or diced.
  • Vegetables are also delicious raw! Cut into sticks, you can pack them and bring them along as snacks. You can also serve a nice vegetable platter.

  • Chopped

How to cut vegetables safely

  • Take your time! It will get easier with practice.
  • Cut your vegetables on a stable work surface, ideally on a cutting board. If the board tends to slide around, put a dish towel under it.
  • Always place your vegetable flat side down to keep it from rolling while you’re cutting it.
  • Use a sharp knife. It will make it easier to cut your vegetables while reducing the risk of injury.
