How to cook hardboiled eggs

Click here to watch the video (only available in French).

Eggs are a great source of protein and make for a quick meal. Hardboiled eggs are super practical because they can be prepared in advance. They can also be used in many recipes.

How to make hardboiled eggs in four easy steps

  • Step 1

Place the eggs in a saucepan filled with cold water. Add the cover and bring to a boil. Note that if you place cold eggs in boiling water, the shell may crack and cause the inside to leak out.

  • Step 2

Once the water is at a rolling boil, shut off the heat and wait 10 minutes, leaving the cover on, while the eggs cook.

  • Step 3

Once the 10 minutes are up, quickly cool the eggs by running them under cold water. This will keep a black ring from forming around the yolk, a sign that the eggs are overcooked.

  • Step 4

To shell the eggs, gently tap the more rounded end until cracks form. Remove the shell starting from the bottom. To finish, you can place the eggs in a bowl of water, which will make it easier to remove any small remaining bits of shell.

How to tell if an egg is fresh

  • To know if an egg is fresh, simply place it in a container of water. Fresh eggs will sink to the bottom, but older eggs will float.
  • Eggs that are a little less fresh are easier to shell because a thin layer of air has formed between the shell and the membrane.
  • Hardboiled eggs can be kept in the fridge:
    • one week if still in their shell
    • three days if the shell has been removed
